Serve with french bread or baguette, a fresh, crispy salad, and enjoy!

Crockpot Cranberry Chicken

1 Whole Chicken or 4 Chicken Breasts
1 Can Cranberry Sauce (whole or Jellied)
½ cup orange Juice
¼ cup Brown Sugar
¼ tsp cinnamon
½ tsp nutmeg
1 tsp salt
1TBSP Corn Starch or other thickening agent

In a small bowl mix brown sugar, cinnamon, nutmeg and salt. 1lb ground beef
BBQ sauce (as much/little as you like)
shredded cheese (whatever your favorite is)

Brown and drain your ground beef. Once cooked, add
bbq sauce (as much/little as you like). Warm
through. Spray muffin pan w/nonstick spray. Press 1
uncooked biscuit into each muffin cup. I generally
buy rolls of 8 biscuits so I just bake the left overs
and save them for breakfast. Once each muffin cup
has an uncooked biscuit in it, spoon the bbq meat
mixture into the biscuit center. Cook as directed on
biscuit package (time and temp) checking often to
prevent burning. Usually, I either serve plain old Pork And Beans from the can, or I buy Baked Beans pre-made in a can.

But we needed to take a covered dish to our 4-H barbecue yesterday and I decided to use my crockpot to make something. I started looking for ideas in my Fix It And Forget It cookbook, but ended up tweaking the recipe to suit me.

Here is my tweaked variation for Crockpot Baked Beans

Ingredients:
6 cans (15 oz. size) of Pork And Beans
1 large can of French's Cheddar Fried Onions (the secret ingredient!)
1 lb. bacon, cooked and crumbled
3/4 cup brown sugar
1/2 Tbsp. mustard
1/4 cup ketchup
1/8 tsp. black pepper
1/4 tsp. onion powder

Mix all together in a greased 5 quart crock pot. Cook on low for 4-6 hours.

I received several compliments on this yesterday and the entire pot was eaten except one very small serving which was finished off at lunch today.

Savory Chicken Sandwiches

Savory Chicken Sandwiches

From Quick Cooking

4 bone-in chicken breast halves
4 bone-in chicken thighs (about 1-1/2 pounds)
1 envelope onion soup mix
1/4 teaspoon garlic salt
1/4 cup prepared Italian salad dressing
1/4 cup water
14 to 16 hamburger buns, split

Remove skin from chicken if desired. (or bought on sale with tripled coupons and therefore free blue bonnet or country crock or whatever... I love triples!!) and melt that in your saucepan. While that melts mix up a double strength 2 cup batch of powdered milk (or regular milk or bought on sale with triple coupons and therefore dirt cheap canned milk... gotta love triples!!). When your NOT butter melts add your NOT milk in slowly and stir the whole time and turn your heat down to low/medium so you don't scorch it. Let the NOT milk and NOT butter cook together for awhile, stir it up often so you don't get a gross skin on the pan that makes it taste bad. Let it cook until the NOT butter doesn't float on the top anymore, then add 1 cup of the cheapo grated parmesan I used the kind in a plastic jar with the shaker top that you get at ALDI and whisk it altogether. The next day the leftovers were still moist, no dry bird here

Here is the recipe:
This turkey brine recipe makes enough for a whole turkey and will add flavor and give you a juicier and more tender bird.
Prep Time: 15 minutes
Ingredients:
1 gallon water
1 cup salt (1 1/2 cups Kosher or coarse salt)
1/2 cup sugar
6 fresh tarragon leaves or 1/4 cup dried tarragon
1 teaspoon black pepper
Preparation:
The water you use should not be chlorinated. If you don't have easy access to good spring water. Boil it first, let the water cool and then add all other ingredients. Mix thoroughly. Place Turkey in large non-metallic dish and cover completely with brine. Let sit in refrigerator for 1 hour per pound. Remove Turkey from Brine, rinse thoroughly and dry. Coat with olive oil. Spray crockpot with non-stick spray for easy cleaning.
2. In a saucepan, combine first 5 ingredients.
3. Pour in milk and stir with a whisk until no lumps remain.
4. Heat and continue stirring until mixture boils and is thickened.
5. Add cheese and then macaroni.
6. Stir until well mixed.
7. Pour into 3 1/2 quart (3. 5L) slow cooker. Cover and cook on low for 2-2 1/2 hours or on high for 1 hour

This recipe was so good! The only suggestion we had was to double the recipe because it was gone in nothing flat, my dd ate about half the pot. IT was so yummy and we added more cheese and next time we might use Velveta. The cooking time was very SHORT and so if your crockpot cooks hot it might be done in about 1.5 hours to 2 hours, next time I will set mine to warm from the start. IT was given ***** stars out of 5 by the whole family!!

I have a friend who just threw it all in the crockpot and it worked fine too :)

<img style="display:block; This will let you cut it up quickly into small pieces.

Preheat broiler and place a large pot of salted water over high heat to bring up to a boil for the whole wheat elbow macaroni.

Place a large pot over medium-high heat and add 2 turns of the pan of EVOO, about 2 tablespoons. Add the chicken bits and brown them, about 5-6 minutes. Add the carrot, onion, celery, garlic, paprika, bay leaf and some salt and freshly ground black pepper. Cook the veggies, stirring frequently, until tender, 3-4 minutes. Add the chicken stock and scrape up any brown bits from the bottom of the pot. Add the hot sauce and crushed tomatoes, and bring up to a bubble. Simmer the chili for 8-10 minutes to let the flavors come together and thicken it slightly.

While the chili is simmering, toss the pasta into the boiling salted water and cook until al dente according to package directions. Once cooked, drain the pasta and toss it into the chili, then transfer everything to a casserole dish. Sprinkle the cheeses evenly over the top and place it under the broiler until the cheeses have melted and the top is golden brown, 2-3 minutes.

Sprinkle the chopped scallions

Honey- Lime Grilled chicken

1/2 c honey
1/3 c soy sauce
1/4 c lime juice
4 boneless chicken breasts.

Mix the first 3 ingredients in a bowl or ziploc bag.
